In The Kitchen | Best Pecan Pie Recipe

When I was in college, I had the opportunity to spend some a week with my grandmother in her hometown, Pilot Grove, Missouri. Visiting a small town for the first time was definitely an experience. Everyone was so friendly and neighbors actually went outside and talked to each other. I got to see where she played outside IN the grain mill with her brother when she was a child. Life out there was slow-paced and no one was hurried or rushed anywhere. It was refreshing. During our trip, there was actually a tornado that destroyed nearby towns and knocked out all of the power to the city, meanwhile we were playing card games by candlelight, and cooked our dinner on a real gas stove. So that was exciting to say the least. We also went to “main street” where they had two banks, two antique shops, a community garden, a car repair shop, a telephone museum, and a cute little cafe where they made fruit and meringue pies fresh every day.

One of my gramma’s best friends had a HUGE pecan tree outside her house and practically begged us to take some of the nuts home with us because they crowded her yard. I swear, I’ve never had more tender, sweet, delicious pecans than what came off that tree. So much so that when my gramma goes back to visit every year, I place my order for several bags worth. And they freeze wonderfully too so when I pull them out of the freezer, it’s like eating them fresh off the tree.

My husband’s aunt made the best pecan pie I’ve ever had for Christmas last year and I could not wait to get home and make it for myself using my favorite pecans. It’s ooey gooey and oh so vanilla-y with the perfect crunch on top. I hope you enjoy it as much as I did. Recipe below these mouthwatering pictures 😉

I’ve been a fan of cooking ever since I was in middle school and a fan of eating since… uh forever. Golden Pecan Pie

Ingredients
1 refrigerated pie crust, softened, or pre-made frozen pie crust
1/3 c. packed brown sugar
1 1/2 t. flour
1 1/4 c. light corn syrup
2 t. vanilla
3 eggs
1 1/2 c. pecan halves or pieces
2 T. butter, melted

Directions

1. Preheat oven to 375°. If using refrigerated pie crust, place in 9-inch glass pie plate as directed on box for one-crust filled pie.
2. In a large bowl, mix brown sugar, flour, corn syrup, vanilla, and eggs until well blended. Stir in pecans and butter. Pour filling into crust.
3. Bake 40 to 50 minutes or until filling is puffed and pie is golden brown. Cool completely on cooling rack, about 2 hours, before serving. Store in refrigerator.
